A most popular  cake which is instant ready to eat cake in 2 min.

VANILLA MUG CAKE

Ingredients :_

4 tbsp all purpose flour ( maida)
2 tbsp sugar (powdered)
1/4 tbsp baking powder
1 pinch baking soda
2 to 3 drops vanilla essence
4 tbsp milk
1/2  tbsp oil
1 tsp chocolate vermaceli


METHOD :-
Take maida, baking powder, baking soda , sugar in the baking cup ( microwave proof cup about 250 ml cup)
Mix all the ingredients well with the help of spoon
Then add milk, vanilla essence, oil and mix well . Avoid lumps
Sprinkle chocolate vermacelli on the top ( u can use anything as garnish )
Microwave for 1 min 30 sec and the cake is ready

MALAI  BAIGAN ( EGGPLANT )

An awesome recipe for eggplant lovers. Recipe by my mom who as per me the perfect and awesome chef in the world. Whomever i have given this recipe they jst became fan of this recipe


INGREDIENTS :-

6 TO 7 black eggplants small in size
4 tomatoes ( blanced and puree )
1 tsp kasuri methi
1 tsp cumin seeds
1/2 tsp garam masala powder
1 tbsp red chilly powder
salt as per taste
fresh cream 1 cup


Wash and cut the eggplants into small pieces and shallow fry the pieces
Keep aside
Take oil in a pan, add cumin seeds , put the tomato puree, cook it for 5 to 7 min then add red chilly powder, salt, garam masla and kasuri methi . When the oil comes out from sides of the pan add eggplant to it . Mix it for few minutes. Lastly add fresh cream and simmer it for 5 min
Garnish with fresh coriander

When kids are at home they need something special to eat so here is spinach cheese toast ( saw on a food channel )......Taste bhi Health bhi

SPINACH CHEESE TOAST

INGREDIENTS :-

8 TO 10 Bread slices
250 gm of spinach ( properly washed and finely chopped )
100 gm paneer grated
1 tbsp oil
2 cheese cubes grated
1 onion finely chopped
1 tsp ginger garlic paste
1 tbsp black pepper powder
salt as pe taste

TOPPING
cheese grated
oregano

METHOD

Take oil in pan, add ginger garlic paste, fry for 2 min then add onion , cook it till it becomes transparent. Add spinach and cook till it becomes dry, add salt and again cook for few minutes. Take the spinach in a bowl add grated cheese and cottage cheese and also add black pepper powder.

Place a little portion on bread, grate some cheese on it and sprinkle oregano and grill it

i grilled it in my grilling gas pan till the lower side became crispy and the cheese gets melted  bt on food channel it showed as grilling in microwave on grilling mode for 5 to 7 min

Easy and quick tea time snack, ready in 15 min. U can enjoy it with hot tea in this rainy weather


SOOJI BOMBS

Ingredients :-
 1 cup suji ( semolina )
 1 onion ( finely chopped)
 1/4 cup grated cottage cheese ( paneer)
1 cube cheese grated
1/2 cup bread crumbs
2 tbsp oil
1 tsp cumin seeds
1 tsp red chilly powder
1 tsp kasuri methi
1 cup milk
salt
oil for frying

METHOD :-

Take oil in a pan, add cumin seeds , after a min add onions in it, when the onion becomes transparent add red chilly powder , kasuri methi , salt and mix it . Then add sooji in it and stir it for 2 to 3 min then add  paneer and cheese into it and then add 1/2 cup milk and 1/2 cup water and cover it with lid for 2 min
Allow it to cool down
Make small balls dip it in milk ( 1/2 cup left ) then roll it in bread crumbs and fry it till golden brown

My work get completed and i m very haap with my work. My last post was cream cheese home made and with that i made cherry cheese cake . And i m so satisfied because it taste as same as we eat outside

Ingredients :-
cream cheese ( see my blog for home made cream cheese )
1 cup milkmaid 
1 cup whipped cream ( after whipping it becomes double ) 
2 tbsp agar agar ( dissolved in luke warm water )
1 cup cherry sauce
10-12 marie biscuit 
1/2 cup butter 

METHOD:-

Crush marie biscuit and add butter in it. Take cheese cake mold and make a base of biscuits in it. Press it evenly with the help of flat surface of glass. Keep it in refrigerator for half an hour 

Take cream cheese in a bowl. Whisk it with hand whisker and then add milkmaid in it and again whisk it for 2 min. Add more than half of agar agar in the mixture ( approx 3/4 ). Then add whipping cream and 2 tbsp of cherry sauce, mix it gently with light hands and pour it above the biscuit base and and again keep it in refrigerator for half an hour

Take cherry sauce in a bowl and add left over agar agar mixture in the sauce and pour it on the top of the cheese cake 

Keep it in refrigerator to set it for about 4 to 5 hours, best hours are to keep it over night 


CHERRY SAUCE :-

30 to 40 cherries ( seedless)
1/2 cup sugar 
1 tsp salt
1 tsp cornflour 
1/2 cup water 

Mix all the ingredients in a pan and heat it and cook it till it becomes a thick sauce.

i always wanted to make cheese cake but the main problem i faced that i don't get cheese cake in my town so one of my friend suggested the recipe of cream cheese and its fantastic and easy too

Here i took 1 litre of milk

Ingredients :-

1 litre milk
1/2 litre butter milk ( if u don't have butter milk u can use 1 lemon juice )
1/2 cup of curd ( not sour )
muslin cloth

take 1 liter of milk in a pan , bring it to boil then add butter milk ( or lemon juice ) crumbled cottage is prepared. Now strain the crumbled cottage cheese and was it under cold water as to get rid of the smell of butter milk . Then our the crumbled cottage cheese in a mixer grinder and add curd into it and give it a grind until smooth paste . Pour this mixture in a muslin cloth and hang it till the water is completely drain out of it

Ur cream cheese is ready

CRISPY CONES

Home made cones with stuffing of vegetables ad toppings of cheese. A Snack loved by all ages

Ingredients:-

1 cup all purpose flour ( maida )
will make about 7 to 8 cones

1 tsp oil
salt
kulfi molds
oil for frying

For Stuffing :-

1 onion finely chopped
1/2 cup grated cottage cheese
1 tomatoes finely chopped
2 cubes cheese grated
1 tsp black pepper
1 tsp tomato ketchup
1/2 cup mushrooms ( optional)


Kulfi method

make a dough by mixing maida, oil and salt keep aside for 15 min
then take a small ball of dough and roll it with the help of rolling pin and cut into slits


Take a kulfi mold , greesse  it with the help of oil and pack its end with the smaller strip


Pack the whole kulfi mold with the strips one by one



Fry the cone along with the molds


Let the fried cone cool down and then take out the kulfi mold slowly

Mix all the ingredients of stuffing except cheese fill half the cone with the mixture then add cheese again fill the left half cone with the mixture and then cover the top layer by cheese
Bake for 7 to 8 minutes

P S :- The inner stuffing can be of ur choice . My kids love this stuffing so i usually make with this stuffing

A tasty snack love by kids and perfect for kids lunch box and can be served as tea time snack

CHEESE CORN DISC

Ingredients :-

Bread slice  10 ( will make 5 corn disc)
1 cup corn ( boiled )
1/4 grated cottage cheese (paneer)
2 cubes cheese grated
1/4 cup butter ( salted)
1 tsp garlic powder ( available in market)
1 tsp chilly flakes
1 tsp oregano
1 tsp black pepper powder
salt if required


here is the method with pictures

first take 2 bread slices and cut into round shape with round lid or cutter
now u have 2 round bread pieces



now take one round piece and cut it again with small round cutter or lid




now ur disc is ready by arranging like this


and the small round bread which is left u can use it by making bread crumbs
in this way u can make as many disc u want

STUFFING :-

take salted butter add chilly flakes, oregano, garlic powder and mix well apply on the bid round shape bread slice and press both the slice
Take cottage cheese, cheese , boiled corns. Add some oregano and a pinch of salt and mix well . Now stuff this mixture in the middle of the disc and bake it at 180 degree foe 15 to 20 min or till the bread is nicely baked and change its colour

SHAHI KHOFTA

A rich paneer kofta curry to impress ur loved ones

Ingrediets:-

FOR KOFTA


100 gm paneer ( cottage cheese )
2 boiled potatoes
1/2 tsp kasuri methi
1 tsp black pepper powder
2 tbsp fresh cream
2 tbsp corn flour
1 green chillies finely chopped
little coriander leaves
salt

Mix all the ingredients well make a shape of kofta ( round or cylindrical ) and deep fry the koftas


FOR CURRY

Ingredients ;-

2 onion paste
1 tsp ginger garlic paste
2 green chilly paste
3 tomatoes puree
1/2 cup cashew nut paste ( cashew soaked in milk and make a paste in mixer grinder )
1/2 tsp kasuri methi
1 tbsp tomato sauce
1/2 tsp garam masala
1 tsp red chilly powder
1/2 tsp turmeric
1 tsp coriander powder
salt


Take oil in pan add cumin seeds,then add green chilly paste, then add ginger garlic paste
 then add onion paste, saute for 2 min till the onion changes it colour
then add dry spices except garam masala, mix for 2 min then add tomato puree, when it leaves oil add cashew nut paste  and lastly add kasuri methi , garam masla and tomato sauce
add 1/2 cup water and put the khofta and simmer for 5 min
garnish with cashew or cream

serve with roti or naan

PAN DRINK

A soothing and refreshing drink especially for pan lovers


serves 4 to 5 small drinks


Ingredients:-

5 to 6 betel leaves ( paan)
1/2 cup gulkand
1/4 cup coloured small pieces of cherry
3 cup milk (chilled)



Wash betel leaves thoroughly in water and make a paste in mixer grinder
In a bowl add milk gulkand and betel leaves paste and mix with hand blender
Pour in small glasses and garnish it with cherry


PS :- If necessary u can add sugar while beating

BOONDI SHRIKHAND CHEESE CAKE

A PERFECT DESERT TO IMPRESS UR GUEST IN DESERTS

SERVINGS :- about 2 to 3 bowls

INGREDIENTS FOR BOONDI :-

1 cup gram flour
1 cup sugar
2 cup water
1 green cardamom
oil for deep frying


take a pan put sugar and water along with green cardamom and let it boil till the sugar syrup is of one thread
Take gram flour in a vessel make a batter by adding water assure that there are not any lumps in it
Keep oil for heating, when the oil is heated put batter with the help of perforated spoon ( boondi jhara ) in the oil, take out the fried boondi in light colour, don't make it too dark
Add these fried boondi in the sugar syrup.


INGREDIENTS FOR SHRIKHAND

2 full cups curd
1 cup sugar or accordingly
1/4 tsp cardamom powder or rose water which ever flavour u like

Hand curd in a muslin cloth for 4 to 5 hours until the water is fully separated from the curd
Add sugar and give a one minute gring in mixer grinder
Add a spoon of cream cheese to give it a cream cheese texture
Add cardamom powder or rose water


Take a glass or a bowl
First place some chopped dry fruits
Second place sweet boondi then again chopped dry fruits
Third place shrikhand and tap the glass or bowl so that it becomes even from top
Garnish with chopped dry fruits and kesar strands


For making it colour full i added green and red food colour in the boondi batter

U can add kesar strands in the sugar syrup too

SANDWICH PANEER  

Ingredients :-
1/2 kg paneer
2 onions paste 
3 tomato puree
1/2 cup cashew paste( cashew nut soaked in milk and grind to paste )
1 tbsp ginger garlic paste 
1 tsp red chilly powder 1
1/2 tsp coriander powder 
1/4 tsp garam masala
1/2 cup fresh cream 
2 tbsp cornflour 
5 to 6 cashew finely chopped 
1 green chilly finely chopped
fresh coriander leaves
1 tsp black pepper powder 
salt 



Cut the paneer in square shape and is u have to make a sandwich of paneer itself that means u have to cut paneer in thin square shape 
make a set of 2 paneer sheets 
Grate the rest of the paneer which is left over 
Add finely chopped green chilly coriander leaves finely chopped cashew black pepper and salt 
Now take paneer sheets now fill the paneer sheets with the above mixture as we have to make sanwich 
Roll each sandwich in dry cornflour and shallow fry in a non stick pan

Take a pan add ginger garlic paste after 2 min add onion paste after onion becomes golden brown add all dry spices then add the kaju paste again cook for 2 min and then add tomato puree cook till it leaves oil
slit the sandwich from between and put it in the gravy and add water and cook for 5 to 10 min 
Last step is to add cream and garnish with coriander leaves

DAHI WADA ( BAKED)

With a drop of oil and without soda soft and yummy dahi wada

1 cup black gram skinned ( dhuli udad ki daal)
2 green chilly finely chopped ( optional)
8 to 10 cashew nut finely chopped 
salt

2 cups full cream curd ( dahi)
salt 

for garnish 
tamarind and jaggery  sweet and sour chutney
cumin powder ( jeera powder)
red chilly powder 
some coriander leaves


Soak black gram skinned overnight or 5 to 6 hours  
grind the gram in mixer grinder 
Take out in a vessel and add cashew nuts and salt and whisk with hands as fast and as strongly u can ( this is the main part where your wadas will become soft and fluffy )
Take appe pan put a drop of oil and put wadas in the hole.Turn upside and when cooked immediately put it in water. when the wadas fully soak the water press it and keep aside 
Whisk the dahi with salt and if sour add some sugar too with water as per consistency 
Put the wadas in dahi and freeze them
at the time of serving garnish it 

AT times it is seen that the wadas soak dahi all over and that time keep some whisked dahi aside that it can be used on serving

U CAN FRY THE WADAS TOO IF U WANT
