CHINESE POTATO CROQUETTES

Something new in usual potato croquettes

Ingredients :-

2 to 3 potato boiled and grated
2 to 3 spring onion finely chopped
1/2 cup cabbage grated and squezed as to take out excess water
1 tsp finely chopped garlic
1 tsp soya sauce
1/2 tsp chilly sauce
1/2 tsp tomato sauce
1/2 tsp white pepper powder ( optional if u want less spicy )
salt
1/2 cup bread crumbs

For frying

oil jst for shallow fry
2 tbsp all purpose flour mixed in 1/2 cup water, see that the mixture is not too watery
bread crumbs for coating


METHOD :-

Mix all the above ingredients then make small balls , if u want u can give cylindrical shape
Dip in the mixture of all purpose flour coat it in bread crumbs and shallow fry it
Serve with sauce

Simple easy NACHOS chips with curd dip

Its simple to make tasty to eat healthy and fav of kids

INGREDIENTS :-

3/4 cup maize flour
1/4 cup all purpose flour ( maida )
1/2 tsp red chilly powder
1/2 tsp oregano
Oil for frying
salt

CURD DIP:-

 1/2 cup hung curd
1/2 tsp black pepper powder
2 tbsp fresh coriander finely chopped
a pinch cumin powder
1 green chilly finely chopped ( optional )

Make a soft dough with the above ingredients and keep it for 15 min.
Take a portion of dough and roll it with a rolling pin like a roti.
Take a round lid of any container and place it on roti and press it . Take out the sides you will get a perfect round shape
Make line like a as if to make 8 pieces and then fry it and take out on tissue paper.


CURD DIP :-

Add all the above ingredients and Serve with nachos chips


P S :- You can add spices and do variation according to ur taste in nachos chips

A healthy snack for kids which they can have at aby time of the day

PINWHEEL SANWICHES

8 to 10 slice of bread ( white or brown)
1/2 cup soya chuncks ( boiled and strained well )
1/2 cup cottage cheese ( paneer )
1/4 cup butter
1 tsp black pepper
2 tsp oregano
pinch of salt
2 tbsp green chutney
2 tbsp tomato sauce
fresh coriander

METHOD

Take the bread slices and cut off its sides
Take 2 breads and roll it with a rolling pin
Apply butter on both the breads and sprinkle a little oregano on them
Place both the bread on the butter paper and  in a line with sides top on one another and press it little
Then apply green chutney on 1 bread and sauce on the other
Now take a little part of stuffing and place it on the top and roll the bread with light hands
Wrap it with the butter paper and keep it in the refrigerator for 30 minutes
Take out the pinwheels after 30 min and cut in slices


STUFFING :-

Take soya chuncks and cut it into small pieces .
Add grated cottage cheese into it
Add black pepper , oregano and salt into it

I wish i can eat mangoes throughout the year but not possible anyways till i am getting mangoes i will make a best use of it

MANGO PANACOTTA

Ingredients :-

2mango( peeled and make a pulp)
2 tsp agar agar
1 cup milk
1/2 cup cream
1/2 tsp vanilla essence
1/4 cup sugar
small pieces of mango
Aluminium foil
1/2 cup water

METHOD :-

Dissolve agar agar in water and heat it on gas for a minute and keep aside
Take mango puree and add half of the dissolve agar agar in it.
Take the glasses in which u want to serve and keep it in slanting position in the cup cake mold
Pour the puree mixture when the glass are in slanting position
Fill them half and refrigerate it for an hour
Take a pan pour milk in it allow it to boil , add cream sugar and vanilla essence and boil it for 5 minutes . Take off from gas and add the left over agar agar in it . Mix it well and add small pieces of mango and pour it on the slanting glasses and cover them with aluminium foil and refrigerator for 4 to 5 hours
serve chilled

A famous maharashtrian dish which is love by all MISAL PAV


MISAL PAV

Ingredients :-
1 cup green gram dal ( sprouted )
1 onion ( finely chopped )
1 tbsp red chilly powder
1/2 tsp jeera powder
1/2 tsp coriander powder
2 green chilly finely chopped
2 tbsp maharashtrian masala
1 tsp ginger garlic paste
 salt


METHOD :-

Heat oil in pan . Put onion in it . Let the onion become transparent then put ginger garlic paste and  all the spices  and 1/2 cup of water then allow the masla cook for 5 min or so . After that add sprouted pulse and put 3 to 4 cups of water and allow it to cook till 5 min

Take a spoon full in a serving bowl . Add all the fursan i
on the top and garnish with onion
I had also put small pakora for more flavour

MAHARASHTRIAN MASALA :-

Take a roasted pan put 1 tbsp corainder seeds, 1 tbsp cumin sedds , 5 to 6 cloves , 1 small stick dalchini , 2 balck cardomom , 2 tbsp grated coconut , 1 tsp poppy seeds. Roast all the masala for 5 min and grind it in smooth powder

A couple of days before i changed my cover pic of my fb page . All lovely people appreciated bt yes they also commented that all are high calories food . So today i decided to make some thing which is taste good and also have less oil

So here presenting CHOLE KULCHE . Chole which are made of less oil or ghee and kulche which are made on a non stick tava without oil or u can bake it also

INGREDIENTS :-

2 cup chole ( soaked overnight )
2 onions roughly chopped
2 tomatoes
10 to 12 pods garlic
1 cm piece of ginger
2 green chillies roughly chopped
1 tbsp garam masala ( i have posted garam masala recipe before )
1 tbsp red chilly powder ( if u want mild lesser the quantity of red chilly powder )
1 tbsp coriander powder
1 tsp dry mango powder
1/2 tsp kasuri methi
2 tbsp oil or ghee ( i preferred ghee as its better than oil )


KULCHE INGREDIENTS :-

1 cup all purpose flour ( maida )
1/2 cup wheat flour
1/ 4 tsp baking powder
2 tbsp curd
salt




Method :_

Boil the chole with adding salt in it
Take onions and roast in in a non stick pan with one or 2 drps of oil
Grind onions , tomatoes, green chilly, garlic , ginger and boiled chole about 2 to 3 tbsp
Take oil ( 2 tbsp ) in a pan and put the grinded paste in it . Allow  the paste to cook finely for 5 min and then add all dry spices then cook it for 5 min again then add kasuri methi and little salt ( because we have salt in chole also ) then add chole cook for 2 min again and add water that is left after boiling simmer it for 5 to 7 min . Garnish with coriander


For Kulche :_

Make a smooth dough with above ingredients . Rest in for an hour
Take grated paneer . Add little salt , red chilly powder , dry mango powder and fresh coriander
Take a small peda and stuff with paneer in it , roll the peda and with light hands tap it
Take a non stick pan and raost the kuche on both side
Brush it with little ghee on top while serving
U can bake the kulche in a oven too

Moms are best . When they come to know that this is to right time to tell their daughters there secrets they open them all and give their life time experience to them and this is the greatest guidance a daughter can get from their moms
My mother gave me her secret recipe of garam masala which gives a dabha style touch to ur food and it taste awesome . In non veg the  taste which u cant even imagine

INGREDIENTS :-

150 gm of black cardomom ( badi elachi )
25 gm green cardomom ( chothi/green elaichi)
25 gm black pepper ( kaali mirch )
50 gm cumin seeds ( jeera )
50 gm cinnamon ( dal chini )
25 gm bay leaf ( tej pata)
50 gm cloves ( laung )

Take a non stick pan roast all the ingredients along its skin ( badi elaichi and chothi elaichi ) till its nice roasted and changes it colour . Then grind it finely and store in air tight container

When ever u make a dhabha style dal tadka or any other dish add this dhabha masala to give it a perfect taste of dhabha

It can also be used in other dishes also . It is my key ingredient.

There are any dishes which are in my to do list and one of them is RASMALAI  which I made successfully after 2 wastage

INGREDIENTS :_

2 liters milk ( 1 liter for boiling and 1 liter for chenna )
8 to 10 tbsp sugar ( for milk which we have to boil)
4 tbsp vinegar
8 to 10 strands of kesar
1/2 tsp cardomom powder
2 cup sugar
3 cups water
dry fruits ( of ur choice )

METHOD :-

Boil one liter milk in a pan .
When it is boiled keep aside for some time
Take vinegar in a bowl add 1/2 cup of water in it. Put the whole mixture in the milk , the milk will start converting in crumbles
Strain the excess water with the help of muslin cloth. Don't squeeze the chenna too much ( that means  don't dry it much )
Put the chenna on a flat base, now with the help of heel of the palm mash it for 8 to 10 min ( it can take more time ) as if it is smooth
Make small balls and flat those balls like patties
Make sure there are no cracks in sides or between, if it is so that means u have not mash it properly

Take sugar and water in a non stick pan, let the sugar dissolve completely then put these balls in the syrup and let them boil till it becomes soft
Don't over boil it otherwise they will become hard
U can add water from the sides of the pan if the chenna soaks the sugar syrup

Meanwhile take 1 liter of milk in a pan and boil it till it becomes 100% to 60%
Add sugar and kesar ( take 2 tbsp boiling milk in a bowl and dissolve kesar in it )


When both the milk and cheena balls are cool down , put chenna balls in the milk and keep it in refrigerator and serve chilled
Garnish it with dryfruits

Today i m sharing with u my first ever recipe which i made. My mom is the best cook in this world i knw all the moms are best cook in this world . She taught me this recipe because it is simple and easy and ofcourse tasty too. It is ready within 10 min

KASURI METHI PANEER

 250 gm paneer ( cottage cheese )
4 tomatoes puree
2 green chillies ( cut into slits )
1/2 tsp garam masala
1 tbsp red chilly powder
2 tbsp tomato ketchup
1 tsp kasuri methi
2 tbsp fresh cream
salt


FOR MARINATION

1 tbsp ginger garlic paste
1/2 tsp red chilly powder
1/2 tsp garam masala
1 tsp kasuri methi
1 tbsp fresh cream
1/2 tsp food colour (orange red )
1 tsp coriander powder
1/2 tsp garam masala
salt

METHOD :-
Marinate the paneer with above mentioned ingredients for about 5 min
Take a pan put oil in it
Add green chilly and tomato puree
Then add red chilly powder and garam masala , cook it for 5 min till oil separates
Add marinated paneer mix for 2 min
Lastly add kasuri methi , cream and tomato sauce and simmer for 2 min
