DAL MAKHNI

1 cup black gram ( sabut udad dal )
1/2 cup red kidney beans ( rajma)
2 black cardamon ( badi elachi )
1 green cardamon (choti elachi )
4 to 5 cloves ( laung )
4 to 5 black pepper ( kali mirchi)
1 tsp cumin seeds ( jeera )
1 small piece ( cinnamon )
1/2 cup milk
1 tbsp ginger garlic paste
3 tomatoes grinded
1/2 cup fresh cream

Soak black gram and kidney beans overnight with water and 1/2 cup milk. Take a pressure cooker put gram and beans with salt and make 8 to 10 whistle. Open it and add the garam masala ( black cardamon green cardomon, cumin seeds, cloves , cinnamon, black pepper all grind in mixer to make powder) and again give 3 to 4 whistle or accordingly till the gram and beans are finely cooked
Take oil in a pan add cumin seeds then add ginger garlic paste then add tomato puree when the puree is cooked add red chilly powder a pinch of kasuri methi then add gram and beans cover the lid for 8 to 10 min then lastly add fresh cream.

serve with rice or nan or plain roti

MANGO LEMONADE

A refreshing drink during mango season

serves 2


Ingredients:-
4 tbsp ripe mango pulp
1 big lemon ( juice )
2 tbsp sugar if required
A pinch of black salt 
A pinch of cumin powder ( optional)

Blend all the ingredients 
Take a serving glass add crushed ice then add lemon slice and mint leaves and pour the blended mixture

ready to serve

SOYA SHAAMI KABAB

Ingredients :-

1 cup soya granules ( boiled in salted water )
2 potatoes boiled ( small )
1 onion ( finely chopped )
1/2 tsp ginger garlic paste
1/2 tsp garam masala
1 tsp kasuri methi
2 green chilies and 1/2 cup coriander ( grind into paste )
1/2 tsp red chilly powder ( if u need more spicy )
1/2 tsp jeera powder
1/2 tsp lemon juice


For shallow fry
1 cup milk
1/2 cup bread crumbs


boiled soya chunks in salted water drain the chunks and beat it in mixer grinder add boiled potatoes and all the ingredients mentioned above
Make patties like shape dip in milk and then rolled in bread crumbs and shallow fry

u cake grill it or deep fry it too

DAL PAKWAN

A traditional sindhi dish loved by all can served in breakfast lunch or dinner


serves 4


Ingredients:-
2 cups bengal gram split and skinned ( chana dal in hindi )
3 to 4 green chilles
7 to 8 pods of garlic
1 tsp cumin seeds
1 tsp red chilly powder
1 cup green fresh coriander
1/2 tsp garam masala
1 tsp turmeric powder
1 tsp dry mango powder

for pakwan

2 cups all purpose flour ( maida)
1 tbsp oil
1 tbsp carom seeds ( ajwain)
1 tsp cumin seeds

make a soft dough by mixing by mixing all the ingredients and keep aside for some time ( 1/2 an hour )


Boil chana dal by adding turmeric and 1 tsp oil in it
Take green chilly ,green coriander , cumin seeds , garlic and grind it in mixer grinder
Take 5 to 6 tbsp of boiled chana dal and grind it in mixer to make a pulp
Take oil in a pan add green chilly coriander garlic and cumin seed paste saute for 5 min add dry spices and then add the chana dal pulp when it leaves oil add the whole boiled chana dal in it

Take a small ball from the dough and roll with the rolling pic from the sides and make it even from all side. Take care that it should be thin from all sides . Pork with knife . Then deep fry it on medium flame till golden brown

MANGO MOUSSE WITH CHOCOLATE CAKE

serves 4


Ingredients :-
chocolate cake (any type of chocolate cake crumbled properly)
100 gm whipping cream
1 large mango ( make pulp of it )
1 tsp agar agar (dissolve in 2 tsp luke warm water)
small mango pieces 7 to 8

Take mango pulp add whipping cream in it fold both well with light hands keep aside. Take water make it luke warm add agar agar ( if u want u can use geletine powder )   in it and let it dissolve for five minutes . Add this mixture to mango and whipping cream mixture . take crumbled chocolate cake add 2 or 3 drops of milk in it. Take shots glasses first layer will be crumbled chocolate cake press it firmly in the glasses in proper level
Set these glasses for 5 min in refrigerator then take it out and put mango mousse ( prepared above ) in it make a proper level set it again in refrigerator
While serving put mango pieces on top

Serve chilled

CHEESE GARLIC APPE IN APPE PAN

Ingredients :-
2 cup suji (rava)
2 cup butter milk or 1 cup dahi
2 onion finely chopped
2 green bell pepper finely chopped) u can use any colour bell paper
2 green chillies finely chopped
1 tsp garlic paste
3 tbsp fresh coriander finely chopped
1 tbsp red chilly paste or chilly powder
1 tsp jeera powder
salt

2 cubes cheese grated

mix all the ingredients except cheese and let in stand for 10 to 15 min. Now take a appe pan put it on gas on simmer and put a drop of oil in each section. Fill half the section then put grated cheese on it and the fill the whole section. Cover it with lid for 5 min then turn it for another five min

Serve hot with sauce or green chutney ( which i mentioned in dabeli recipe)

u can also add veggies according to ur taste

PASTA SHELLS IN WHITE SAUCE

Ingredients :-
2 cup pasta ( any shape)
2 tbsp all purpose flour
2 tbsp butter
2 cups milk
1 tsp black/white pepper powder
1 tsp oregano
1 cube cheese
salt

for baking
1 cheese cube
1 tsp oregano + dry garlic powder

take butter in a pan add all purpose flour saute it for a minute on low gas and immediately add milk and mix well. Make sure their are no plums if yes blend it with hand blender when milk comes to boil add pepper  powder and salt and lastly add grated cheese

boil pasta in water with little salt and oil as the pasta don't stick with each other . When the pasta is boiled jst put cold water on it

add these pasta in white sauce
Put in on a baking dish put grated cheese on top of it and bake it on 180 degree for 10 min

Sprinkle oregano mixed with dry garlic powder on top

Serve hot

DABELI

A famous dish from the streets of gujrat
bt now also a famous street food in every state

ingredients :-
1/2 kg potatoes (boiled and mashed)
dabeli masala powder( recipe mentioned below)
garlic chutney (recipe mentioned below)
green chutney (recipe mentioned below)
1 cup peanuts ( roasted and skin removed )
2 to 3 onions finely chopped
 4 to 5 green chilly paste
2 tbsp lemon juice
1 tbsp sugar
2 tsp red chilly powder
1 tsp turmeric powder
1 cup coriander leaves
1 tsp fennel seeds
1 tsp cumin seeds
1 cup pomegranate seeds
nylon sev


take oil in pan add fennel seeds and cumin seeds then add half the chopped onion  when the onions becomes transparent add potatoes and all the spices along with dabeli powder  add lemon juice too mix it thoroughly with the spices lastly add peanuts ( fried it with a drop of oil ) take out in a plate and sprinkle green coriander on top and pomegranate seeds too
take pav or bun slice it from between apply a little butter and roast it lightly on tava or pan
apply green chutney on one side and garlic chutney on another palce the place the mixture in between add chopped onion and nylon sev and roast it from both side

GARLIC CHUTNEY :-
take 12 to 15 garlic cloves add 2 to 3 kashmiri lal mirch ( sabut....soaked in hot water for 10 to 15 min) 1 tsp corainder powder , cumin seeds and salt grind it and make a fine paste

GREEN CHUTNEY :-
Take one cup coriander leaves add 2 green chillies , 1 tbsp lemon juice and salt grind it and make a paste

DABELI POWDER
Take a pan put in it 1 tbsp cumin seeds, 5 to 6 cloves , 5 to 6 black pepper balls, 1 small stick cinnamon and 2 to 3 dry whole red chilies grind it to make a dry powder

MANGO ICE TEA

A perfect drink for summers to beat the heat and also a refreshing drink for mango lovers

serves 2

Ingredients

1 1/2  tsp tea powder ( or 2 tea bags)
2 cups of water
1 cup crushed ice
1 cup mango pulp ( peel 1 mango and grind it in mixer. Be sure the mango is not riped )
1/4 cup sugar ( or 1/2 cup sugar syrup)
2 tbsp lime juice


take water in a pan add tea powder boil it once and cover with lid for 2 min
then keep it in refrigerator and let it become cool
take out of fridge add mango, sugar and lime juice  and blend it well
serve in glass with lots of crushed ice
serve chilled

Aam Panna.....a total refreshing drink in summers


Ingredients:-

1/2 kg raw mangoes (peeled and sliced)
1/2 kg sugar
2 tbsp mint leaves ( optional)



Boiled the the sliced raw mangoes in a pressure cooker for about 2 whistle
Let the boiled sliced cool down then add sugar and mint leaves and grind it
Store in a jar and whenever u drink take 2 full tbsp of this mixture and add cold water
Lastly sprinkle black salt and cumin powder
The quantity of sugar depends upon ur taste as how sweet u wan

OREO CHOCOLATE BLAST

Specially for kids as my kids love it a lot. kids need a lot of energy for studies and games this drink boost their energy.

Ingredients:-

serves 1

4 Oreo chocolate biscuits
2 tbsp whipped cream
2 tbsp vanilla ice cream (for garnish)
1 tbsp hot chocolate powder
2 tbsp sugar
chocolate vermaseli ( for garnish)
chocolate balls ( for garnish)
1 tbsp chocolate syrup (for garnish)

blend all the ingredients with 2 oreo biscuits except the ingredients for garnishing
take a glass crush 2 oreo biscuits at the bottom then pour the blended mixture

now put vanilla ice cream garnish it with chocolate syrup , chocolate balls and vermaselli

serve chilled

MEXICAN TACOS

tacos shells

Ingredients:-

1 cup wheat flour
1 cup maize flour
1 tsp oregano
1 tsp chilly powder
1 tsp oil
salt as per taste

For filling

250 gm paneer ( cottage cheese) cut into small pieces
2 small onions finely chopped
2 tomatoes finely chopped
1 green bell pepper finely chopped
2 tsp red chilly powder
1 tsp garam masala
1 tsp jeera powder
1 tsp kasuri methi
salt as per taste


Make a smooth dough by all the ingredients mentioned for tacos. Keep it aside for half an hour
Then take a small portion of this dough and roll it with the help of rolling pin. The size should be as of puri we make at home and then poke it with the help of fork
Fry on medium flame as soon as it is fried nicely take out on a paper napkin and immediately put the rolling pin in between and press from both the sides 
In this way make the tacos from the remaining dough

For filling

take oil in a pan put onion fry till its golden brown then add chopped tomatoes then add all the spices except kasuri methi cover it with lid and let it cook for 5 min on low gas 
open the lid mix all the ingredients by slightly mashing the tomatoes and then add cottage cheese pieces and finely kasuri methi

Take taco shells put the filling inside it and then garnish it with cheese

Chocolate Mousse with filling of crushed oreo biscuits
Ingredients:-
2 cup whipping cream ( whipp untill fluffy)
1/2 tsp butter
1 cup grated dark chocolate
2 tbsp fresh cream
1 tbsp agar agar( china grass)
3 tbsp water
Dissolve agar agar in luke warm watermix untill completely dissolved
Melt dark chocolate with butter in double boiler. Melt it completely
After it is completely melted let it cool for 2 min after 2 min add fresh cream then add the agar agar mixture
Add the above mixture in the whipped cream mix it gently
At the end add crushed oreo chocolate biscuits
Then serve in small cups or small glasses and garnish with chocolate vermicelli
Refrigerate for an hour or two

Kale Chane Kababwith curd dip
Ingredients:-
2 cup boiled and mashed kale chana
1 cup mashed potatoes
1/2 tsp kasuri methi
1/2 tsp ginger garlic paste
2 tbsp cornflour
1 tsp red chilly powder
2 green chillies finely chopped
1/2 cup bread crumbs
3 to 4 tbsp fresh corainder
1 tsp chaat masala
Mash all the ingredients finely make any shape u like
U can shallow fry or deep fry
PN :- the quantity of potatoes should be half than the quantity of kale chane
Curd Dip:- take 2 tbsp cream and 2 tbsp hung curd add salt and white pepper powder
U can also add mint and coriander leaves and vegetables too
