There are any dishes which are in my to do list and one of them is RASMALAI  which I made successfully after 2 wastage

INGREDIENTS :_

2 liters milk ( 1 liter for boiling and 1 liter for chenna )
8 to 10 tbsp sugar ( for milk which we have to boil)
4 tbsp vinegar
8 to 10 strands of kesar
1/2 tsp cardomom powder
2 cup sugar
3 cups water
dry fruits ( of ur choice )

METHOD :-

Boil one liter milk in a pan .
When it is boiled keep aside for some time
Take vinegar in a bowl add 1/2 cup of water in it. Put the whole mixture in the milk , the milk will start converting in crumbles
Strain the excess water with the help of muslin cloth. Don't squeeze the chenna too much ( that means  don't dry it much )
Put the chenna on a flat base, now with the help of heel of the palm mash it for 8 to 10 min ( it can take more time ) as if it is smooth
Make small balls and flat those balls like patties
Make sure there are no cracks in sides or between, if it is so that means u have not mash it properly

Take sugar and water in a non stick pan, let the sugar dissolve completely then put these balls in the syrup and let them boil till it becomes soft
Don't over boil it otherwise they will become hard
U can add water from the sides of the pan if the chenna soaks the sugar syrup

Meanwhile take 1 liter of milk in a pan and boil it till it becomes 100% to 60%
Add sugar and kesar ( take 2 tbsp boiling milk in a bowl and dissolve kesar in it )


When both the milk and cheena balls are cool down , put chenna balls in the milk and keep it in refrigerator and serve chilled
Garnish it with dryfruits
